After relocating to Chicago, Sonat Birnecker and her husband had a choice: to buy a house or start a business. They bought a still. With three generations of distillers in the family, it made perfect sense. Koval Distillery was built on the knowledge of making distilled spirits – doing everything from start to finish, including milling grains on site, sourcing from local farmers, and controlling the entire process.
